THE VINEYARD Mix of vineyards surrounding Puligny-Montrachet
VINE AGE 30+ years old
SOIL Limestone & clay marl
FERMENTATION Fermented entirely in lightly-toasted barrels, 33% new (from Raymond in Ladoix). Juice is allowed to oxidize before being lightly sulfured.
AGING Aged in oak with no batonnage after fermentation begins; racked once in early Summer to remove the lees, and a second time in February into tank.
