Lopez brings deep expertise to his craft, having spent 15 years at the legendary Domaine Prieuré Roch before focusing entirely on his own label in 2022. His winemaking is defined by a commitment to natural and organic principles:
- Minimal Intervention: He uses only native yeasts for fermentation and avoids adding sulfur.
- Whole Cluster Fermentation: Most of his red wines undergo whole-cluster fermentation (often around 70%) followed by long, gentle macerations to preserve finesse.
- Aging: Wines typically mature for 12 to 14 months in neutral Burgundian oak barrels, which allows the "saline and mineral-driven" character of the terroir to shine.
