Domaine Bonyvresse is the project of Clément Bony, a nomadic "artisan-vinificateur" who produces natural wines by blending influences from his global winemaking journey. Clément's background is a mosaic of international experiences that shaped his "minimal intervention" philosophy. Born in Alsace, he originally studied law before pivoting to wine. He earned diplomas in winemaking and wine business in Montpellier between 2010 and 2013. He worked as a sommelier in Strasbourg's natural wine scene and completed several key internships, including time in Italy with producers like Catina Giardino. He honed his craft in the Southern Hemisphere, assisting with 2019 and 2020 vintages at Momento Mori in Australia and studying viticulture in New Zealand. Before launching Bonyvresse, he worked alongside Loïc Roure at Domaine du Possible in the Roussillon, which remains a primary source for his grapes.
"Nuit de Feu" 2022 is known for its light, fruity, and "vibrant" character, it is often described as a "vin de copain" (a friendly, easy-drinking wine) ideal for summer.
- Nose: Fresh berries, red currants, and subtle floral notes.
- Palate: Dominated by red and black fruits with a "symphony of flavors" led by the Cinsault. It may have a slight natural fizz or "funk" characteristic of natural winemaking.
