Domaine de Cassiopée (founded in 2020 by energetic winemakers Talloulah Dubourg and Hugo Mathurin, who trained under legendary producers like Jean-Marc Roulot and Benjamin Leroux).
Vine Age & Location: Sourced from a 0.9-hectare plot named En Gerlieus, situated in Chassey-le-Camp (just south of Maranges on a northeast-facing hillside). The vines are exceptionally old, ranging between 50 and 70 years of age.
Winemaking: Organic farming practices with low-intervention cellar methods. The 2022 vintage was vinified with 40% whole clusters and fermented with native yeasts. The wine underwent a slightly extended aging period in used oak barrels to extract deeper texture and concentration.
- The Nose: Expressive and high-toned. It displays aromas of fresh red cherry, wild raspberry, and crushed rose petals, underpinned by a touch of light spice, herbal notes, and soft earthy undertones.
- The Palate: Light- to medium-bodied, agile, and remarkably vibrant. The palate echoes bright sour cherry and cranberry notes with a crunchy fruit profile.
- The Finish: Clean, precise, and structural. It features a fine grain of sandy, drying tannins and balanced, mouth-watering acidity.
Domaine Cassiopee was awarded "Flavour of the Year" award in 2021 by Winehog.
