Based in Monein, Domaine Castéra now encompasses approximately 10 hectares of vines in the Jurançon appellation, nestled between the Pyrenees and the Atlantic Ocean — a unique geographical location that profoundly influences its wines. The Lihour family, spanning five generations since 1885, has been dedicated to organic and biodynamic farming practices, with meticulous attention to each individual plot.
The grapes are harvested by hand, pressed slowly without crushing, and fermented using indigenous yeasts. The estate avoids excessive intervention: aging takes place in appropriate containers— stainless steel tanks, demi-muids, stoneware eggs, and old barrels —to preserve the fruit's energy and the terroir's freshness. Each of the wines (Jurançon Sec, Tauzy, Memória, etc.) is a showcase of living wine: they evoke silky textures, mineral notes, and subtle elegance, with a fine balance between ripeness and tension.
Vinification: The wine is aged on fine lees in both stainless-steel tanks and oak barrels with minimal intervention. It is certified as organic and follows biodynamic practices.
Nose: Intense citrus, boxwood, acacia blossom, and tropical fruits.
Palate: Precise, full-bodied, and energetic with a distinct saline, mineral finish and "mouth-watering" acidity.
Pairings: Excellent as an apéritif with charcuterie or Bayonne ham. It also pairs well with roast poultry, mushroom risotto, or matured goat cheese.
