The Domaine Chazalon, "Altitude 658," 2021 is a flagship red wine from the Pic Saint-Loup appellation in the Languedoc region of France. Named after the elevation of the peak it honors, it is celebrated for its elegance and mineral precision derived from high-altitude terroir. Produced from a small, 4-hectare estate that is certified organic and follows biodynamic principles. 

The 2021 vintage was aged for two years in truncated wooden vats (cuve bois tronconique) to preserve fruit purity while adding structural depth. Described as airy yet structured, reflecting its cooler, high-altitude origin in the Mediterranean landscape.

Nose: Offers a complex profile of black fruits (blackcurrant), sweet spices, licorice, and floral hints of violet.

Palate: Characterized by fine, supple tannins and a "suave" richness. It balanced deep fruit flavors with earthy, leathery undertones and a lingering, flinty minerality.

Parings:
