"En Sazenay" vineyard sits at an altitude of 250–300 meters—making it the highest vineyard in the Mercurey appellation. This elevation provides excellent natural diurnal temperature swings, giving the wine a distinct, crisp tension and a lovely saline, mineral streak on the finish.
-
Balanced Oak: Winemaker Manu Bautista ages this 100% Chardonnay for 12 months in oak barrels, but with a highly balanced approach: roughly 30% to 40% new oak, with the remainder being 1- and 2-year-old barrels. Furthermore, the domain handles the fermentation process entirely in the barrels, allowing the oak to seamlessly integrate into the wine rather than overpower it.
-
Nose: Highly expressive and slightly exotic. You will pick up prominent notes of sliced pineapple, mango, and citrus zest, layered over subtle hazelnut (noisette), warm vanilla pod, and fresh honeysuckle.
-
Palate: Forward and opulent. It has a beautiful, viscous volume and texture, filled with sweet core fruit. However, it sidesteps any flabbiness thanks to the vineyard's characteristic back-end mineral chew and bright freshness.
Grape: Chardonnay
Region: Burgundy
