Champagne produced from the 2021 vintage. Guillaume Hénin and Romain Hénin are cousins who represent a powerful "new wave" of winemaking within the same extended family in Champagne.
• Grapes: It is a 100% Pinot Meunier (Blanc de Noirs), sourced exclusively from the "Les Terres Chaudron" single vineyard plot in Cerseuil, located in the Vallée de la Marne.
• Production: Extremely limited, with only 1,325 bottles produced globally.
• Dosage: Classified as Extra-Brut, with a low dosage of 4.7 g/L.
• Winemaking: The wine is vinified in vats and notably does not undergo malolactic fermentation, preserving its natural acidity and tension.
Palate: White bread spread with slight condensed milk, hint of Haribo gummy bear, almond cream at start. Breathe for 1 hour and dried fruit appeared and final wave with pure mineral water with almond flavour in the end.
