The Name: "Laisse Tomber" means "let it be" or "forget it" in French, but also translates literally to "let it fall"—a nod to a skateboarding accident that sidelined Wolber during a harvest at Ganevat and ultimately led him to start his own project.

The Sourcing: While he is based in Burgundy, this specific Spätburgunder often utilizes fruit from the Baden region in Germany, where his brother Christoph (of Wasenhaus) also makes wine.

The 2021 Laisse Tomber Spätburgunder is a natural red wine crafted by German winemaker Bastian Wolber. Known for his "Wine of the World" approach, Wolber sources organic grapes from both Germany and France, blending his heritage with the high-end techniques he learned while working at legendary estates like Domaine Bizot and Domaine Ganevat.

  • Aromatics: High-toned notes of crunchy red fruit, including strawberry, cranberry, and pomegranate, with subtle floral hints (soft flowers) and a touch of earthiness or "natty" funk.
  • Palate: Gentle and precise with crunchy acidity and a mineral, salty finish.
  • Winemaking: Wolber typically employs whole-cluster fermentation with minimal intervention and very low or no added sulphur.
