Joined full-time by husband Steve in 2016, Céline initially rented a small 0.5ha parcel in Passenans while working for other producers in the Jura, including the Domaine Labet, Badoz, and St-Pierre.
It's also good to note that Julien Labet was a big influence on Céline’s winemaking – it is therefore no surprise that the labels of both domaines are the work of a mutual friend and local artist.
Céline and Steve decided to introduce the 'pied de cuve' technique and the use of bigger vessels (600ltr demi-muids and diamond-shaped concrete vats) for a fast and efficient fermentation process – from 2020 no sulphur is used during vinification and ageing, and the wines have gained in clarity and depth.
The reds are destalked by hand, given three weeks maceration and a short élevage in cuve, no sulphur has ever been deemed necessary.
Sourced from the original plot purchased by the Gormallys, a stunning slope in Passenans with heavy, clayey red marlstone. The vines are old, some planted in the 1960s, yielding fruit of great depth. Produced in the non-oxidative "ouillé" style (topped-up barrels). Aged with 2/3 in concrete vats and the remainder in old Meursault barrels.
Nose: Pungent and complex with notes of citrus, apple, and stone fruit, evolving with hints of hazelnuts and a subtle "ammonia funk and lift" that is characteristic of the producer's style.
Palate: Wonderfully balanced with a "linear spine of acidity". It is full-bodied, almost like lemon oil, with a briny, sea air-like freshness and a firm, mineral core. Long, clean, and delicious, showcasing a great length that some critics believe rivals top Burgundy producers.
