Joined full-time by husband Steve in 2016, Céline initially rented a small 0.5ha parcel in Passenans while working for other producers in the Jura, including the Domaine Labet, Badoz, and St-Pierre.
It's also good to note that Julien Labet was a big influence on Céline’s winemaking – it is therefore no surprise that the labels of both domaines are the work of a mutual friend and local artist.
Céline and Steve decided to introduce the 'pied de cuve' technique and the use of bigger vessels (600ltr demi-muids and diamond-shaped concrete vats) for a fast and efficient fermentation process – from 2020 no sulphur is used during vinification and ageing, and the wines have gained in clarity and depth.
The reds are destalked by hand, given three weeks maceration and a short élevage in cuve, no sulphur has ever been deemed necessary.
A tiny 0.3 ha 20 years vineyard in Château-Chalon on stony limestone-rich marl, this is a special terroir tucked away, up a cool and humid combe surrounded by a lush and biodiverse forest. Taken over in 2012 the vines have never seen any chemicals, they are ploughed by horse, and the only two neighbours are vignerons friends sharing the same sustainable approach.
Nose: Complex and floral with layered aromas of lemon zest, yellow apple, and white peach, accented by hints of vanilla bean and fresh almond.
Palate: Described as having "jolting" acidity and a dense, textured mouthfeel. It features notes of stone fruits, lemon curd, and a distinct oyster shell salinity. A long, elegant, and mineral-driven finish with "salivating bitters".
