Grape Varieties: Primarily 100% Chardonnay (though some Réserve blends include up to 20% Pinot Noir depending on the base year).
Viticulture: Certified organic (Ecocert), hand-harvested from old vines grown on distinct white and red marl soils over limestone.
Winemaking: Secondary fermentation takes place in the bottle using the classic méthode traditionnelle. The wine is aged on its lees for 18 to 24 months before disgorgement, resulting in a bone-dry style with minimal sulfur added and little-to-no sugar dosage.
