Second release from Pauline Bérèche– and an absolute stunner. A mere 1,000 bottles only produced. 

• The Nose: Rich, dark, and highly aromatic. It opens with sweet profiles of plum jelly and almond-rich frangipane, layered alongside a deeply savory, earthy mushroom duxelles roundness.
• The Palate: Highly texturized and plush. It delivers an intense, pillowy froth that carries earthy and mossy undertones, complementing core fruit notes of yellow plum and dried strawberry.
• The Finish: It carries a signature sauvage (wild/animalic) edge balanced out by an elegant, piercingly clean acidity, closing with a distinct note of malt biscuit.
