The "La Forest" Climat: Located on a southwest-facing hillside on the left bank of the Serein River, this site is technically a sub-climat of the larger Montmains Premier Cru. While most producers label it as Forêts or Forêt, Dauvissat retains the traditional spelling, La Forest.
Kimmeridgian Soils: The vineyard sits on distinctively intense, stony Kimmeridgian limestone packed with fossilised prehistoric oyster shells. This terroir heavily infuses the wine with its signature marine, saline character.
Traditional Oak Aging: Unlike many Chablis producers who rely purely on stainless steel, Dauvissat ferments and ages his wines in old oak feuillettes (barrels). He utilizes minimal new oak to protect the purity of the fruit while gently imparting texture, weight, and subtle hints of beeswax and reduction.
- Aromas: Opens with a highly complex bouquet of crushed oyster shells, flinty minerality, lemon rind, white peach, and hints of cold marble or petrol.
- Palate: Satiny, multidimensional, and deeply powerful. It balances a heavy, unctuous mid-palate feel with searing, electric acidity and intense saline ocean spray notes.
